We went out for dinner! It was my birthday dinner.

Belated happy birthday, Tricia! My BD was the 13th.

Tonight I made a 'creation' with items I had on hand. I used a spinach, feta, rice 'pie' recipe and improvised. I used kale from the garden, brown rice with feta cheese and then instead of milk (since we don't drink milk) I used ricotta cheese. It also has eggs and then is topped with parmesan cheese. It turned out quite scrumptious.

We've been out of town for a while so it is nice to get back into the food groove.

That sounds intriguing, LL!

Today is our wedding anniversary. Since we don't care to go out on weeknights (hubby gets home late, so we like to eat right away when he gets home), I'm making one of his favorite meals that I can't stand - a tomato, beef, egg noodle, and green olive concoction. I'll eat some hamburger stew I made on Saturday.

And I'm planning on making a couple mini chocolate pies (mini because with just the two of us, we have to diligently and voraciously eat a whole pie before the crust gets too soggy, and with my current eating plan, that's just not possible. I will eat some, definitely, but not half a pie over the next 2-4 days!) We found some aluminum "pot pie pans" which look like they'll work well for this purpose.

And now HAPPY ANNIVERSARY, Tricia!

I don't have a clue about our dinner this evening. Wednesday's are always a bit crazy. We host a Bible study in our home every Wed night so I'm always scrambling to get dinner over with and the kitchen cleaned up before people begin arriving. My husband and I are basically late eaters---like dining about 8pm so eating at 5:30 or 6 is a real stretch. But we do it.

Tonight I will either make stuffed acorn squash which is an easy meal and yummy or I will make Tuscany soup (which has potato & kale). Any votes?

Edited to add: Oops! It looks like I fibbed when I said I didn't have a clue about dinner. Or did the Spirit just quickly lead me to some choices? (Don't vote on that one.)

It's probably late but can I vote for the stuffed acorn squash? And when you get the time would you tell me how you prepare it?

We're just doing macaroni and tuna tonight because that's what I feel like. We'll be going to The Truth Project at church tonight. It has been very good so far.

Quinoa and wakame, or some other seaweed, with broccoli and carrot and cabbage and kidney beans cooked in ghee. Anyone else use seaweed for cooking, I'd be interested what you do with it, great for digestion . Also trying to work out how those hare krishnas cook their halwa, no one will tell me

Tonight I'm doing boneless rib steaks on the grill. Side dishes will be potato and onion slices stacked with some butter, salt, and pepper, then wrapped in foil and tossed on the grill, (drooool) and the asparagus I've been putting off for a week.

Oh, Bill, that sounds SO GOOD! (that's either me drooling or licking my chops)

I'm thinking chicken pot pie tonight. Or maybe baked chicken breasts and stuffing. Hmmm.

Like what? Be upfront please. I have to say, sounds like people eat too much carbs and not enough protein and fresh foods. Also too much meat and I bet most eat processed foods as well.

I am having a banana for b'fast with some yoghurt and also some semolina & milk. Also a grapefruit.

If this thread becomes one of those threads where people's eating choices are picked on, it will no longer be a fun thread, and I will leave.

I am serious. How much meat I eat is my business, thank you.

A left over roast chicken from Costco. I used it first to make a soup. Tonight I am taking the rest and mixing it in with stuffing.

We don't have time to eat dinner tonight

Well, Nate started basketball and on thursdays he gets out of BBall at six and has to change and be to jukido class by 6:30, so I guess dinner will be late and he'll have to pack a snack for in between. But I have figured neither out!

Giulia - it was probably the seaweed, but might've just been the... strange combination of foods. Seaweed is not a food item for most people in the States (unless it's in sushi or hidden somehow - isn't carageenan seaweed?), and combining it with kidney beans and so forth might sound unappetizing to some people.

My meal tonight isn't processed meat - the only thing processed is the canned soup in the pot pie. And it has a biscuit crust, not a regular pie crust.

I DID decide on pot pie. We'll also be finishing off the chocolate pie tonight (hmmm - two kinds of pie!)

Tricia, it was you mentioning pot pie that was the reason I had some for lunch! LOL

I am apparently too vulnerable to suggestion.

Sorry, Jenny and Guilia....I didn't mean to offend. Mosquito was right, it was the combination of those things that made me queasy.

Anyhoo...I will never say anything derogatory about anything anyone eats again...I'll just say when it sounds delicious!

Tonight we are having Turkey Scallopini (we've had that a lot lately because we love it!) with wild rice, baked squash and asparagus.

joyfulmn,

You won. That is what I made last night. Again this is my own creation but we think they're yummy. I start by browning a pound of Jimmy Dean italian sausage. I use half of it for the two of us and save the other half for another meal. While that's browning, I bake the squash cut side down for 30 minutes at 350. I mix 1/2lb browned italian sausage with grated carrots, onion, sometimes zucchini or summer squash, sour cream, salsa or picante sauce, garlic, and last night I had some cooked rice and threw that in. Mix that together. Then when the squash has cooked 30 minutes, I take them from the oven, fill them with my sausage/veg mixture and bake them for another 20 minutes, then top with parmesan cheese and bake another five minutes.

Really you can improvise and use 'whatever' and they always turn out good. But we love 'em because it's a self-contained meal and when you're done, we just put the rind down the disposal and voila! we've cleaned up!

Anyway, if I left anything out or you have questions, just ask. LL

Sure Jenny. Here you go...

Turkey Scallopini/Piccata

Ingredients:
salt & freshly ground black pepper
4-6 turkey cutlets
1 cup all-purpose flour
2 eggs beaten (I use Egg Beaters)
olive oil
2-3 garlic clove, minced
1 1/2 cups chicken broth
2-3 tablespoons fresh lemon juice
3 tablespoons chopped fresh flat-leaf parsley
Capers (as many as you like)

Directions:
-Pat turkey cutlets dry. Place them inside a plastic bag and pound out to to desired thickness (I make mine about 1/4 inch thick). Then season with salt and pepper.
-Dredge turkey slices in egg then flour, shaking off excess.
-Heat olive oil in a 12-inch heavy skillet over high heat until hot but not smoking, then cook turkey until browned on both sides and just cooked through, about 4 minutes total. Transfer to a platter and keep warm, covered.
-Add more oil to skillet and cook garlic over moderate heat, stirring, until fragrant, about 30 seconds. Add broth and deglaze over moderately high heat, scraping up brown bits. Boil until broth is reduced to about a cup.
-Stir in lemon juice, parsley, capers and salt and pepper, to taste and swirl with a whisk until a smooth sauce is formed.
-Return turkey to skillet with any juices on platter and simmer until heated through, about 1 minute.
-Serve

This is great with rice or pasta and fresh veggies.
