A lamb was (in Old Testament times) the main form of sin offering, and Christ died as the perfect once for all sacrifice for our sins (as prophesied in Isaiah among other places).
But He was pierced through for our transgressions, He was crushed for our iniquities; The chastening for our well-being fell upon Him, And by His scourging we are healed. All of us like sheep have gone astray, Each of us has turned to his own way; But the LORD has caused the iniquity of us all To fall on Him. Hence He was (as John the Baptizer proclaimed Him to be "The Lamb of God that takes away the sins of the world."
This was reinforced many times in the New Testament, but almost verbatim in 1st Peter:
For you have been called for this purpose, since Christ also suffered for you, leaving you an example for you to follow in His steps, WHO COMMITTED NO SIN, NOR WAS ANY DECEIT FOUND IN HIS MOUTH; and while being reviled, He did not revile in return; while suffering, He uttered no threats, but kept entrusting Himself to Him who judges righteously; and He Himself bore our sins in His body on the cross, so that we might die to sin and live to righteousness; for by His wounds you were healed. (1 Peter 2:21-24)
And it was a used to lead others to Christ:
Philip ran up and heard him reading Isaiah the prophet, and said, "Do you understand what you are reading?" And he said, "Well, how could I, unless someone guides me?" And he invited Philip to come up and sit with him. Now the passage of Scripture which he was reading was this: "HE WAS LED AS A SHEEP TO SLAUGHTER; AND AS A LAMB BEFORE ITS SHEARER IS SILENT, SO HE DOES NOT OPEN HIS MOUTH. "IN HUMILIATION HIS JUDGMENT WAS TAKEN AWAY; WHO WILL RELATE HIS GENERATION? FOR HIS LIFE IS REMOVED FROM THE EARTH." The eunuch answered Philip and said, "Please tell me, of whom does the prophet say this? Of himself or of someone else?" Then Philip opened his mouth, and beginning from this Scripture he preached Jesus to him. (Acts 8:30-35)
So Jesus is frequently referred to/symbolized as a lamb in recognition of His great sacrifice which made possible our Salvation.
