I've got to get rid of the spam casserole. It's getting a little aged, and I don't think spam casserole improves with age.

Ha! Well, no, at least not yet.


Do you want the recipe? It's Kerrlaw's Famous Spam Casserole!


Here is the recipe he posted a long time ago, and I saved it in my recipes:

Kerrlaw Spam Casserole

One 12 oz. can Spam
one 7 oz. package Creamette macaroni
1/4 cup butter or margarine
1/4 cup flour
1/2 tsp. salt
1/2 tsp. dry mustard
Two cups milk
1/2 lb. shredded sharp cheddar cheese
parsley or green pepper

Prepare macaroni according to package directions.

Thinly slice one can Spam, reserve a few slices and cut the rest into squares.

For sauce: melt butter or margarine; blend in flour, salt, and mustard; stir in milk; cook over medium heat, stirring until thick; add cheese, stir until melted and smooth.

Mix Spam squares and macaroni and pour into 2 quart casserole dish; Pour on cheese sauce; Place Spam slices on top; add parsley or green pepper for color.

Bake in 350 degree oven for 20-25 minutes.

Simple, but elegant.


I didn't follow it exactly. And I also admit that I don't really like cheese so I only had a few bites. But my family liked it!

Personally speaking, I use either Paint Shop Pro or IrfanView (free software - just google it), depending on whether I want to create or just crop/resize a picture. If you want me to create an avatar for you, Cranky, I'd be honored.
