We're having hamburgers on the grill too. I just got a new grill and dh bought a huge box of frozen hamburger patties at Dot foods.

sauteed chicken with bacon, mushrooms and cheese on top, peas, cucumber salad and some sort of carb for everyone except me - doing Southbeach for 3 days again.

going to my mom's for lasagna. DOn't really want to. She wanted to make it for Mother's Day but I wasn't up to going over (we have had some major famiy changes: if you want details check out the HS prayer thread), she then asked what day this week I was going to come over to eat lasagna. I like lasagna I really do. I just don't want to go anywhere.

Ladies, I have a confession to make. I'm at home in rural Lousiana for the last 10 days or so. I have eaten everything that hasn't eaten me first. Fried chicken; chicken & dumplings; chicken & dressing; chicken & rice; chicken & sausage gumbo; boudain; fried crawfish; crawfish etoufee'; and today--grilled redfish w/ crawfish sauce. It has been the ultimate food trip. I've had gumbo at least 4 times. I'm leaving in two more days, and life will get back to normal, but I have had the best time eating my way around town. Yum, Yum.

Tonight I am making beef and noodles with mashed potatoes, green beans and a cherry pie. May as well take advantage of the cooler weather, eh...lol

I don't know the quantities, but I wilt the fresh spinach with a bit of butter or olive oil and then remove it from the heat and press it between paper towels to remove much of the moisture. Then I saute onions and garlic. Add the spinach back into the pan with some sour cream and heat through. It's super easy.

Dh got a bunch of seasoned chicken breasts. They're uncooked, and are probably supposed to be deep-fried, but I'm going to try baking them in the oven.

Spinach and sour cream are such a good mixture. One of my favourite recipes has both spinach and sour cream in it.

I'm definitely going to try that creamed spinach.

Spinach Bake

Brown an onion in a tablespoon of butter
Mix in softened spinach, two cakes of noodles (pre-softened in boiling water), a handful of cheese, pepper to taste and a 300ml container of sour cream
Bake in a preheated oven at 180 degrees celsius for half an hour
