Meatloaf, red skin mashed potatoes, fresh green beans. DH cheerfully ate salmon last night (and leftovers for lunch today) which he doesn't really care for, so I'm making his favorite dinner tonight.

Probably Hamburger Helper. Mondays are tough for me. (I know it's Wednesday, but it FEELS like a Monday since hubby had a 4 day weekend.)

I do have some fresh peas I'll cook up, too.

I am not sure what's for dinner. I was thinking about throwing something in the crock pot. I was also thinking about having hamburgers/hot dogs on the grill. Pizza would be nice, but both of us are trying to lose weight so probably not a good idea. I don't think I feel like actually making something.

I'm having french onion soup w/ whole wheat homemade croutons and swiss cheese. Dh has his class tonight and will probably have a burger out.

French Onion Soup
EV Olive Oil (as little as possible for the pan you are using)
4 med onions diced, any variety (or 2 very large)
2 cloves garlic
1/2 cup white wine (optional)
Splash of Worchestershire Sauce
4 cups low sodium chicken broth
4 cups low sodium beef broth
White pepper to taste
Sea Salt to taste

Sautee onions and garlic in olive oil. Deglaze the pan with wine (or a bit of the broth, if you opt out with the wine.) Add all other ingredients and simmer uncovered for 20 minutes.

Serve either over toasted bread and swiss cheese or with croutons and mozzarella cheese (or visa versa.)

The secret of this recipe is the balance of beef and chicken broth... if you get that, you can play with the rest.

I ended up making a made up recipe....crescent rolls laid out flat, fill with a mixture of chicken, cream of chicken soup, water chesnuts, and cheese, fold over ends to make a "log", and bake. YUM. Its base recipe was a chicken crescent wreath I've made tons of times, but i didnt have everything I needed.

Tonight...who knows. But I am eating carefully this week because I really want a pizza sometime this weekend. But gallbladder hasnt felt "right" so I may not get it.

I will put chicken breast in the crockpot with a can of cream of broccoli soup. I'll serve it with a green salad and probably rice.

I'm going to try BBQ pork chops in the crockpot, with foil-wrapped potatoes in there too (thanks whoever mentioned that...I had never thought to try it before! And my ever-present Italian veggie salad...tomatoes, cucumbers, broccoli. I think my family is getting sick of my pregnancy veggie cravings.

Oh, p31woman, that sounds SO GOOD! It would never fly here, though - too many veggies, and too chunky.

I'm thawing some chicken breasts. I don't know what I'll do with them. I'd grill them except they dry out so fast on the grill.
