Okay this is what I found: Jars are too full Product on rim of jar Processing temperture or pressure too high Jars processed too long

Another thought I just had was, do you use an electric or gas stove? My mil has electric. I'm thinking the temperature fluctuates less with electric because gas is harder to adjust.

I usually just can pears in a light syrup like I can peaches. We love to eat them that way. A couple of years ago I had a ton of pears so I did a few extra things too. Pear Butter 6 to 7 lbs pears 4 cups sugar 1 tsp grated orange peel 1/2 tsp nutmeg 1/3 cup orange juice Wash pears. Core, peel and slice pears. Combine pears and 1/2 cup water in large saucepan. Simmer until pears are soft. Puree, being careful not to liquefy (should be 2 quarts pear pulp). Combine pulp and sugar in large saucepot, stirring until sugar disolves. Add remaining ingredients. Coook until thick enough to round up on a spoon. Ladle hot butter into hot jars, leaving 1/4 inch headspace. Remove air bubbles. Process 10 minutes in boiling water canner.

Well, I like a really light syrup so for about 6 cups of syrup I use 5 1/2 cups water and 1 1/4 cup sugar. For a heavy syrup you can do equal parts sugar and water but that just seems too heavy to me. So, you just put the sugar and water in a saucepan and heat to almost boiling. Then you wash your pears, peel them if you want, and then core and half or quarter them. Treat them with some kind of asorbic or citric acid (I use fruit fresh) to prevent darkening. Then you cook the pears in the hot syrup until they are hot throughout and pack them into hot jars leaving 1/2 inch headspace. Ladle the hot syrup over the pears and make sure to get all the air bubbles out. Process pints for 20 minutes or quarts for 25 minutes in a boiling water canner. I think this works best with Bartlett pears. When you can peaches you don't have to cook them in the syrup, just put them right into hot jars and ladle hot syrup over them. I think process time is about the same.

Kristin, thank you so much for the information! I've been wanting to do that but just didn't know how. How do you go about treating the fruit with fruit fresh...is there directions on the container? Would lemon juice work as well?

Yes, there are directions on the fruit fresh container. I think you put a couple of tbs of the fruit fresh in a bowl/sink of water and then put the pears/peaches in there. I've never treated with lemon juice but I assume you could. I just don't know the exact amounts that would be necessary. HERE is some information about using lemon juice that I just found.

I think home canned peaches and pears are the best thing in the world. There's nothing like opening a can in the middle of the winter...it's just like adding a little summer to a dreary day. I know you can buy canned peaches and pears in the store very cheaply but they just don't taste the same. Plus, home canning peaches/pears is so easy...anyone can do it!

Also, you know what's in your jars...unlike the cans you buy in the store. Wish now I'd known this when our peaches were at their peak!

someone brought me a 1/2 bushel of tomatoes last night so Im canning today!! I will just do chunk tomatoes with onions and peppers in them--I also did strawberry jam yester day as someone bought me strawberries--it didnt set up right but taste wounderful!! I will have to find some beans to do also

well i canned my first batch of tomatos for this season--I got 8 quart---a long way from 200 but its a start!! Ill have that many tomorrow--someone brings ma about a peck a day--so Ill be busy--it smell great in here--I made stewed tomatoes with them

Michelle, what a find! I got all excited over 10 jars I found at a garage sale for 10 cents a piece (a far cry from $8 a dozen!) and the 12 jars a friend gave me that were used. I just love deals like that!!

I'm getting married a week from Friday so there's not much time for canning. Hopefully the week after we get married I can make some pear preserves, jam, and/or honey. We'll see if my pears last until then!

Looks like the peaches are finally ready here so I'm planning to pick some up on Friday when I run my errands....unless this baby decides to come before then (I hope). If we have the baby first my mom will help can when she gets here! She's also bringing a bunch of apples from their yard so we can make applesauce.
