on doing Applesauce I get seconds or "deer" apples--they cost alot less because they might have brusies but you are cooking them anyway so it wont matter--

Pizza Sauce
1 Bushel paste tomatos, plum tomatos, washed stemed and either peeled or ground in a blender or hand blender
8 large peppers, I use a mix of green, red and yellow chopped fine
2 or more (to taste) hot peppers ground fine
8-10 large onions chopped fine
4-6 garlic cloves chopped fine
cook the above 30 min or more so tomatos cook down some--stirr often
add 1/2 cup olive oil
2 cups red wine vinager
4 Tlb oregano
4 Tlb basil
2 Tlb Thyme
4 Tlb Parsley
8 bay leaves
Salt and Pepper
2-4 tlb sugar
cook for 20 min to 30--add 4-6 cups Parmesan or Romono cheese ( the amount of cheese depends on how thick you want it) ---can in canner--

I use this for spaghetti sauce also--for spaghetti sauce I will add mushrooms----the sugar takes out some of the acid in the tomatoes

went to a thrift store yesterday and found a dehydrator for 5 bucks--great price and great dehydrator also!!

Thanks for the recipes, ladies!

I made blueberry jelly, strawberry jam, and blackberry jam last year for the first time. I got rave reviews! They were great Christmas presents for some of my harder-to-buy for folks.

Sorry to butt in. This is my first post EVER on Crosswalk and I haven't taken time to read all the rules and regulations and how to stuff. But I HAVE been canning for around 30 years so I couldn't resist a little input.

Pressure Canner - I have two pressure canners and use them exclusively. I have found that it saves time, water, and energy if I boiling water bath in them. You do not need to fill the canner with water. I usually put water about 1/4 to 1/2 way up the jars. Put the lid on the canner but not the pressure guage. Listen for the water to boil, adjust the heat so it stays at a boil but the steam coming out of the vent doesn't have to be real strong, and time from that point (just like you would for a full kettle of water). I've been using this method between 5-10 years. Never had anything spoil yet - and no sickos either. ;)

Tomatoes - A few years back I learned from the County Extension to use the pressure canner for tomatoes but a different way. (probably where I got the idea for using it all the time) Place jars of tomatoes in canner, fill water an inch or so up the jars. Put the lid on, bring to a boil and let steam out till the air is exhausted (approximately 10 min). Put pressure guage on canner and bring canner to 15 lbs pressure. Here's the best part - TURN IT OFF and let the canner go back to zero pressure! Remove the lid ONLY when you have NO pressure inside the canner (that's the caveat with pressure canners) I love this method because if you want to do some tomatoes and leave the house you can! As soon as you turn off the stove you can leave - or go to the garden.... ;)

Applesauce - I like mine chunky so I use a waffle grid type potato masher instead of a strainer or food mill.

I have canned all my life. I don't recomend buying a used pressure canner. The seal can be old or damaged and could explode on you. I got my last one at Walmart. You used to go to your home extention office and they would check your canner for you, but they don't exist anymore ( gov.cut backs). Now if I'm in doubt I buy a new one. Use only canning jars in a pressure cooker, other jars can break in the canner. Ball or Kerr are the best. You can also get really good canning books from both companies. They're good starter books. I have also seen Hot baths at Walmart. These are the non-pressure cookers that you use for pickles, jams, Jellys, ect. The investment in the jars can be a little expensive but unless the mouth gets chipped or the jar cracked they will last you a life time. I have alot of my grandmothers jars.

A tip about corn. If you are going to freeze corn on the cob or off, instead of blanching it in hot pot of water, run it through the wash and rinse cycle of your dishwasher. Don't use the dry cycle though. You can do alot more corn alot faster.

A good way to do apples is to go ahead and peel and slice them. Then mix in the sugar and the spices. Freeze in freezer bags, then all you have to do for a pie is add the four and butter. It works good for other pie fruits also.

Don't worry about jelly that doesn't jell. It's great on pancakes, waffles and french toast. My kids loved it when my jelly didn't jell.

Don't worry about food poisoning. As long as the jar is sealed your safe, unless it has set on the shelf 3 or 4 years. The only thing that worried me was canning meat. For that reason I've never done it.

I have a friend that freezes apples for apple pie as you described, Dianna. She said it's great because it saves a lot of time overall.

you can buy new seals for canners--I still have my great grandmothers canner and have replaced the seal 3 times and the gage once--and in our county we do have an extension office--Its also eaiser for me when doing applesauce to use the victoria strainer---when I do Copper kettle Apple Butter we do 30 bushel at a time--we can get them done in 2 days with 3 victoria strainers going at a time and 3 people working!! you can also freeze applesauce--

It's better to use a reagular canning kettle. It comes with wire insert that hold the jars in place while they are boiling. Also it's good to have a pair of canning tongs. The canning kettles you can usually buy them at kmart, or any good hardware store. The canning tongs usually come in a kit with a few other canning utensils. The tongs are very important so you don't burn your self whenil handling the hot jars.

Canning jars differ mostly in design. But the most inportant thing are the seals and lids. Do not use old seals, or old lids with any rust on them.

Ketchup
1 Peck (12 1/2 pounds) tomatoes washed
2 med onions sliced
1/4 tea cayenne pepper
2 cups cider vinegar
1 1/2 tablespoons broken cinnamon stick
1 Tlb whole cloves
3 cloves garlic minced
1 Tlb paprikia\
1 Cup sugar
2 1/2 tea salt
Wash and chunk tomatoes and onions. Boil together until soft. Run through sieve. Mix pulp well--add pepper and simmer until reduced to 1/2. Place vinegar in enamal pan, put spiced in spice bag and add to vinegar and simmer 30 min. turn off burner, add lid and let sit. When tomatoe mixture is done add the 2 mixtures, sugar , paprikia, and salt. Boil until thick stirring. Pour into steril jars add lids and process in bubling water bath for 5 min. Makes 6-7 pints.

Saurkraut
Per pint jar:
shredded cabbage
1 tsp pickling salt
1 tsp sugar
1 tsp vinegar
Pack cabbage in jar , add salt,sugar and vinegar. Add distilled water and remove bubbles, cap jard. Let sit 3-4 weeks.

Dilly beans
wash beans sterlize jars and lids--Put beans in jars standing up
Add red pepper to jars for hot spicy beans
Add 1 flower dill
add 1 clove garlic
Pour brine over beans to with in 1/2 inch of rim
Put on lids and ringa--bubbling water bath for 10 min Let stand 2 weeks
Brine:
2 1/2 cup vinegar
2 1/2 cup water
1/4 cup salt
Bring to boil pour over beans

Tomato Soup
1/2 bushel tomatoes
1 bunch celery
10 med onions chunked
Simmer tomatoes and onions, and celery for 2 hours stirring often. Cool and put through sieve or Squeezo strainer--Add 1 1/2 cup brown sugar
1/4 cup coarse salt
1 pound butter
Mix well, add small amount of tomato mixture with 2 cups flour for a smooth paste, then add rest of tomato mixture. Mix well until smooth--Laddle into jars cap and ring and bubbling water bath for 20 min. You will never eat canned tomato soup again!! This is really yummy!!

When you're canning tomatoes do YOU put salt in the jars? I never have because we have enough salt in our diets. My mil always put a good tablespoon in each of her jars. Mine usually boil some out into the canner even though I leave headspace. She packed hers right to the lid and hers never boiled out. Is that the difference?

Anyone interested in a recipe for making relish out of those great big yellow cucumbers that lurk under the plant leaves? It's delicious, especially with hot dogs!

Also, who cans their small potatos, and small onions? Any suggestions or recipes?

I'm doing all of my regular canning this year, but want to try more. I'm in need of a pressure canner so I can do more than pickles, relish, and tomatos!

I dont add salt---never had a problem--I have a golden glo pickle relish using the large cukes--it has red peppers and green peppers and onions--you have to use a crock is that like yours?/

I hope it's alright to pursue this in this particular thread since it's about canning.

I defninitely like the not adding salt. Any clue as to why my jars invariably spill over into the canning pot? I've tried more headspace, less headspace, I tighten the lids. They still seal but I've wasted juice and the jars have quite a headspace of air. (my sil would definitely scorn if she ever saw them) This has happened no matter what canning method I use. I'm self-taught on most things I do so I could be missing something.
