This thread is for recipes and encouragement to ladies who are trying to low-carb for special diet reasons, such as PCOS, gestational diabetes, insulin resistance, etc. I figured that instead of posting this in Health & Fitness it could remain here in conjunction, mainly with the PCOS thread. I got a Tapas cookbook from my Joelie for Christmas and have been making various recipes from it... Albondigas con salsa de tomate (meatballs in tomato sauce) Ingredients: 8 oz. ground beef 1 egg (slightly beaten) 4 scallions thinly sliced 2 garlic cloves minced 2 Tbsp parmesan 2 tsp fresh thyme leaves 1 Tbsp olive oil 3 tomatoes chopped (large ones like beefsteak tomatoes) 2 Tbsp red or dry white wine (if you don't drink I suppose you could use beef broth) 2 tsp chopped fresh rosemary pinch of sugar sald and ground black pepper Directions: 1. Put the meat, onions, garlic parmesan and thyme, egg, salt & pepper in a bowl and mix well. 2. Shape the meat into 12 small firm balls. 3. Heat the olive oil in a large heavy frying pan and cook the meatballs for about 5 minutes turning frequently, until evenly browned all over. 4. Add the chopped tomatoes, wine (or broth), rosemary and sugar to the pan with sald and ground black pepper to taste. 5. Cover the pan and cook gently until the tomatoes are pulpy and the meatballs are cooked through. Check the sauce for seasoning and serve the meatballs hot, garnished with the thyme. You could make a side of 'low carb' pasta or regular pasta but serve yourself 1/3 cup or less. Or you could have a slice of bread with garlic powder & butter on it with a small side salad with a low carb dressing like ranch.

No I'd like it to stay here...I had originally wanted this to remain in the PCOS thread...but I was told that I needed to make my own thread so as not to hijack that one (though I had specifically been asked to put my recipe there). If it gets moved to Home and Garden or Health and Fitness, I'd just rather have it deleted all together.

Well, I don't know about all the issues you named in the op, so I feel a bit funny suggesting ideas that may help with a disease I don't know about; however, I grew up with a diabetic dad and learned quite a lot about eating without sugar. As an adult, I fear abusing my body and want to eat without too many simple carbs to avoid illnesses caused by poor diet and to already be in the habit of eating well when I develop Type II (if the expert's theories on genetics and diabetes are correct.) All that to say if you are eating a certain way for a disease, make sure you don't blindly follow my advice. My favorite low carb meal is so simple: Summer Favorite Serves 2 2 Chicken breast or pork chops 2 Tbsp/ any vinegar-based dressing (italian, greek, etc- any brand) Zuccini, halved longways Yellow Squash, halved longways Bell Pepper, halved and seeded Marinate chicken breast or pork chops in dressing for 30 minutes. PLace everything on a hot grill and grill on high indirectly for 30 minutes (or low directly for 20 minutes) Turn 1/2 through cooking.

I made something similar to that this summer! Only with the chicken after it was grilled I cut it into strips and put it in a low carb tortilla that had been spread with a special Cream cheese, sin dried tomato, almond home made spread and topped it off with dried oregano! Delish!

That sounds yummy!! I think I must have some Latino blood b/c I just love that type of food!
